I have two phantom golds. Is is possible to use these connected to an AV amp as L and R channels in a 5.1.4 setup?

not really,because a delay of about 160ms.

Don't know about the Phantom Golds but my 250 Pro works extremely well with my Onkyo AV amp driving the front speakers via the Line1 output, which was a prime reason for buying a Devialet over Naim.

my AV amp doesn't have an optical out (only optical in). How would it connect, even with the lag?
