My Master music library is on my Mac 12 Core Pro, along with ROON, and ROON server. ROON Airplay to my 5 Golds and dialog works well, and acoustically to my ears equal to Spark TIDAL with same source tracks.
Have not done any instrumented A/B testing to this point.

Coming in late but what are the options to EQ streaming sources - particularly Tidal?

If you are streaming Tidal from within Roon via Airplay, your EQ is done in the Roon app with the latest Roon update using the EQ controls. Spark Tidal has no built-in EQ controls, as yet.
