You're definitely on the right track if you're going to have room treatment done first. Then, with a Devialet amp, your speaker upgrade path can go all the way to the top! 120 v 200 really depends on your preference for listening level and speaker choice. Just be aware that some of the more expensive speakers can be a bit on the inefficient side.
I can see where your dealer is coming from. If he sells you a 120 then that's it. If you get a 200 and you really get the bug (and you will!) then you're probably going to be knocking on his door in the future for another 200 and much more expensive speakers.
If you're thinking about upgrading your speakers in the future anyway, have a look at some 2nd hand speakers on Audiogon. You might find that you can loose less money buying and selling towards your ultimate system.
