I had a little play with the configurator and this might be a solution:
Start with a 1000 Pro config. Then remove the companion. It took me a few clicks before that worked. Then you can add the other speaker outputs by going to stereo and it reverts back to 250Watt and Left/Right channels automatically. Done
Edit: The configurator still calls it 1000 so that might explain what you're seeing on the display when you take out the SD card.
Another Edit: I tried to do the same with the O d'A and then the mono/stereo option doesn't come up. My interpretation of that is that the O d'A is only configurable as a dual mono setup and the 1000 Pro configurator is ready to be 'halved' to 250 Pro.
