Yes, once I have the MM/AIR3.0/RoonBridge working, I can disabled my Ultrabook/AIR2.1.3/RoonBridge. Or I could have them for SQ comparison.

RoonServer is not an endpoint. RoonBridge is. Separation of RoonServer and RoonBridge will enable each doing unique function, using less resources, and hence, theoretically should produce better SQ. And, I believe it will make AIR more reliable with lesser chance of dropout or failure. And, I can move all of them (RoonServer and RoonBridge) out of my listening environment.
