I’m thinking of adding another Phantom Gold and just wondered if it’s worth it. Does the stereo sound staging sound good? Had a demo of a pair once but that was a long time ago so can’t remember.

IMHO It’s definitely worth it if you also want to sit down and listen to the music and enjoy the sound stage, it is significantly better. If you only intend to use the Phantom as a background sound floor, one might suffice. Be prepared to be a bit more careful regarding positioning and physical height of the Phantoms if you go Stereo though. I started with one, and adding 1 more gave me a much bette experience. And yes stereo work very well. Now I have 4 connected to my TV - and even it is not surround - it rocks my house )

Its absolutely worth it! My TV setup is wildly different than most so I'll let others chime in on the best way of connecting them. I have 2 TV rooms (both surround sound) that are driven by Phantoms.
6 x Phantom Gold, 3 x Phantom Silver, 2 x Phantom Classic, 9 x Phantom Reactor 900, Symetrix Radius AEC-2, 2 x JBL Synthesis SDP-55, Dante

Yes. If you can cope with 60ms of delay (most can) connect optical out from your TV to one of them, and then they can sync over WiFi or Ethernet for stereo.
