Am I able to use tv remote to change volume when using optical cable from tv to phantom II. Tested that 3,5mm headphone cable is able to, but I would prefer to use optical cable insted of 3,5mm plug

If the TV can adjust the volume of the optical output, yes, otherwise, no I'm afraid.
