Hi, I am a new owner of a Devialet 250. A newbie question, please. Since this is a single unit, should I set it as stereo or mono? Thank you in advance for your advice.

For a single Devialet 250, stereo is the setting you want.  Enjoy!

Stereo, assuming you're using it in a standard hifi setup driving two speakers.
