I've been through similar kinds of emotions - everything you said is so much echos probably a similar experience shared by many. its a significant investment regardless of what option or configuration you use. its all sold as a premium experience and its TOO easy to find ways its not. while no excuse - the good news is those less than exactly perfect parts wont be noticed by your ears or from a distance. but you know its there....and again no excuse for a premium brand.
not an excuse - but - the cycle has begun again. v3 is new. it holds lots of promise but there is a bit of old vs new vs hype all mixed up. hard to say where it is with v3 yet.
but for anything new - there are going to be some manufacturing issues, some software issues, some old/new/compatibility issues.
(i.e. if you used Dos1 , then Dos2, and now of course DoS3 starts afresh)...
V1 long gone for all but the most stalwart users, v2 is a sold known base - but the v3 is the new shiny - and its improved and yet not refined at the same time.
there is a track record it gets better unless or until it doesn't and sometimes even goes backwards for a period of time - but overall across multipme versions and for the consumer mutltiple DEVICE LINES it has all improved - perhaps not enough and some of the expectations have never materialized even over long periods of time. just try to buy one of those OG dante converters its got to be one of their best kept secrets. ... again i think if you make it too easy for mortals to build then it cannibalizes the custom business...
