Cartridge outputs are normally specified for 0dB=5cm/sec (at 1kHz iirc) but plenty of records have a higher level than this recorded on them, so one needs to check whilst playing one's most heavily modulated record. I have heard +8dB to be a common max modulation level.
One doesn't strictly need a DAW, the input flashes red on the display if digital clipping of the ADC is approached. I have used this feature to set gain of all my analogue inputs.
