The optical direct mode is also available for DOS1. You'll need an IPhone and the Phantom app, not Spark.
1: launch Phantom app (not Spark)
2: restart Phantom (3 clicks)
3: pair Phantom with app
4: on app, tap ten times between “mute” and “night” icons
5: select Optical Direct mode
6: select channel (L/R/mix)
7: select max. output level 0dB/-12dB
I haven't tried this "recipe" myself, but it should work. 
Are your speakers too old for the DOS2 update?
I don’t even see these as options?  

Number 2:  3 clicks of what?  There’s No restart in the app 
  - I’m guessing click on the back of speaker button 3x?!?

Number 4:  there isn’t a mute button in the app. 

Also once it’s done how do you undo it?

First, are you using the old Phantom app in iOS and are you on DOS1?
Three clicks on the back is correct. 
If you reset the speaker with three clicks and perform a new setup everything is back to normal.
