Amazing - exactly what I needed to know, thanks so much.

So then my arrangement would look something like this I think?  

Mixer -> Analogue XLR or RCA output (I think RCA should be fine, since it's less than 5m run, and just for home use? -> A/D Splicer (Like this one?) -> Optical to -> Avantree Transmitter -> Optical Splitter (like this one?) -> Phantoms left/right?> 

I'm not clear on how I define with channel is left/right on the Avantree interface, but the split happens after (at the splitter dongle) just before the phantoms.
Would the splitter somehow 'know' which channel is left and right (or that there's just two channels) and keep them separated?
