Regarding the Node2: 
Do you expect any noticable SQ differences when connecting the Node to the Le120 via USB or Toslink? Based on my setup I cannot use the RCA connections.

On Roon, you're pretty much spot-on.

As for Node, you can use Toslink. I don't believe there's an USB output from Node. Please take note that Toslink is "supposed" to handle up to 24/96 bitrates only. But in my case, I was able to stream 24/192 music to my Le200. So, using Toslink should be good for you if you decide on Bluesound Node 2.
