Do you know offhand which Apple RJ45 to USB dongle you're using? At least some of them are limited to 10/100 mbps speed. I believe it must support USB 3.0 in order to operate at gigabit speed. Of course, I haven't a clue if/how that would explain why it's working well for you.
Not sure your setup would allow it, but it would be interesting to know if it would still work well if you ran Nucleus to router and router to Devialet.
