I believe the beta AIR 3 is actually on the Devialet website somewhere but I'm darned if I can find it.

I've never seen it on the Devialet site other than the reference to a dropbox where it exists.

They might then be able to release a stable version. I'm itching to use the two week trial of Roon to see if it betters my present NAS into USB setup, but don't want to start using it only for Air to stop working.

I have reported this to Devialet. In addition I have noticed that every time I have a stuttering, I have the following log in /var/log/system.log:
May 29 15:24:25 mbpr kernel[0]: IOAudioStream[<ptr>]::clipIfNecessary() - Error: counted 1 clip more than one buffer ahead errors.
It would be interesting if those encountering stuttering are also having the same log on their Mac.
That could help Devialet to pinpoint the issue before general release.

Ah OK, I vaguely recall someone mentioning finding it on devialet.com but that could've been a misunderstanding.

I posted precisely this issue here soon after AIR3 came out. I also reported it to Dev with no reply so far.

Earlier post

I have largely hidden the issue by increasing the delay from 100 to 500 and now 1000ms.

Also I do not believe this is only a problem in AIR3. I believe it can occur in earlier versions
I don't have the same luck in AIR3.0b as my Win8.1/AIR2.1.3 experience. I have even done a clean install of El Capitan and AIR3.0b still stutters. Maybe my old Mac Mini (late 2009 model) is not good enough.

Hint: It's not the Mac - it's hugely over specced for the task of audio streaming. Angel
